Description
In the heart of the Haute Vallée de l’Aude, near Limoux, the estate was founded by the Benedictine Abbaye de Saint-Polycarpe in the 13th century. Today worked by Aigline de Causans and Laurent Maffeïs, farmers and winemakers, it stretches over a northern slope between woods, streams, meadows and vineyards with rich biodiversity. 7 hectares of vineyards in this cool high-altitude soil are worked with organic practices in harmony with the vines, man and animals. Three draught horses and sheep graze in the vineyards in winter.
Clay soil on sandstone bedrock produces sprightly and taut wines in AOC Limoux and PGI Haute Vallée de l’Aude available in white, rosé, red…and with bubbles!
